Cilantro Lime Cauliflower Rice Recipe

Ingredients:

  • three tbsp ghee or butter
  • 2 tsp minced garlic
  • three cups cauliflower, riced
  • 1 tsp salt
  • 2 tbsp lime juice + zest of 1 lime
  • ½ cup sliced scallions
  • 1 tsp recent cracked pepper
  • ½ cup chopped cilantro 

Steps:

  1. In a big skillet, soften ghee or butter. Add minced garlic for about 15 seconds till aromatic (cautious to not burn), then add cauliflower rice and salt. Mix and canopy for about 5 minutes or till cauliflower is tender.
  2. Toss with lime juice, scallions, pepper, and cilantro, and luxuriate in.
